Soneva Fushi and Chef Pascal Barbot have joined forces to bring France's highly regarded Astrance restaurant to the Maldives. From October 23, 2022, until January 23, 2023, Flying Sauces, the resort's zipline fine-dining restaurant, will host the unique 12-week residence. Chef Pascal started his practical training as a young culinary student at some of the best eateries in Europe and Australia.
The chef-owner of the Michelin-starred Astrance restaurant, Pascal Barbot, has been selected to work as a resident chef at Soneva Fushi in the Maldives for a period of 12 weeks. The only fine dining zipline experience in the world, Flying Sauces offers customers the chance to eat in an open kitchen while suspended over the earth. In keeping with the resort's commitment to sustainable luxury, the menu will use regional foods and place a strong emphasis on zero waste.
